Lemon Garlic Roast Chicken

Nothing beats an easy to make and easy to prepare roasted chicken! This herb blend has an unbeatable flavor that includes butter, garlic and a hint of white wine. It beats any store bought chicken and has the most delicious crispy skin and juicy meat.

Yield: 4 Servings

Ingredients:
4 Pound Whole Chicken, room temp (giblets & neck removed from cavity)

1/2 cup unsalted butter, melted

4 tablespoons olive oil

1/4 cup white wine

1 lemon, halved

2 teaspoons salt & 1 teaspoon black pepper (add more depending on preference)

2 tablespoons fresh parlsey, chopped

6 garlic cloves, minced

2 fresh rosemary sprigs

Directions:

  1. Preheat oven to 425 degrees Fahrenheit.

  2. In a bowl, combine the butter, olive oil, white wine, juice of half a lemon, salt and pepper, parsley and garlic.

  3. Dry chicken thoroughly with paper towel. Season the chicken and chicken cavity with the mixture. Season the chicken on the outside and inside with more salt and pepper if desired.

  4. Take the other half of the lemon and stuff into the chicken cavity along with the rosemary sprigs. Tie the legs together with kitchen sting.

  5. Place the chicken, breast side up, in a roasting pan or lined baking sheet. Cover with aluminum foil and place into the oven for 1 hour and 30 minutes, basting half way through cooking time. To make sure it is cooked through, carefully remove the skillet from the oven and poke a knife into leg and pierce the meat. If the juices run clear, the chicken is done. If you see a rosy pink color, it needs more time. Continue to roast, checking every 5 minutes, until juices run clear. (If you’re still not sure, you can also use a knife to shred some of the meat along the thigh bone—the meat should look non transparent)

  6. Baste once more. Set your oven to the broil setting and broil the chicken for 3-4 minutes, until golden.

  7. Remove from the oven, cover with foil and allow to stand for about 10 minutes before serving. Drizzle the pan juices over and enjoy!
