Guacamole
When watching a movie or even entertaining guests, I always have some go to recipes. This simple, yet delicious, guacamole recipe is one of those staples. Serve this with tortilla chips or even use this as a topping for quesadillas. All I know is, I always make extra because this is always the first thing to go.
Yield: 6 servings
Ingredients:
· 3 avocados, ripe
·1/4 cup red onion, minced
·1 tablespoon fresh lime or lemon juice
·1/2 cup tomato, diced
·1/4 cup cilantro, chopped
·1/2 teaspoon salt, or more to taste
·1/2 teaspoon pepper
·1 jalapeno pepper, minced (optional)
Directions:
1. Cut the avocados in half, use a spoon to scoop out the seed. Then, scoop out the filling and put them in a bowl.
2. Add the lime juice to the avocado. Using a fork, gently mash the avocado until creamy, but still chunky.
3. Stir in the tomato, cilantro, onions, salt, pepper, and jalapeno (optional). Taste the guacamole and adjust the flavors with salt, peppers and lime juice to desired liking.
4. Serve immediately or cover with plastic wrap and refrigerate up to one day.
Tips:
· Ripe avocados are essential to great guacamole. You'll know when an avocado is ripe when it gives just slightly when squeezed.
·To keep the guacamole fresher longer, place the avocado seed in the guacamole mixture. The seed elongates the freshness period.
·
