Yield: 8 Servings

Ingredients:

2 tablespoons fresh squeezed lime juice

3 cloves garlic, minced

2 teaspoons paprika

2 teaspoons onion powder

1 teaspoon dried oregano

1 tablespoon olive oil

1 1/1 pounds skirt steak, cut into 1/2 inch pieces

12 ounces tortilla chips

1 cup sharp cheddar cheese

1 cup pico de gallo, homemade or store-bought (https://maciskitchen.com/blog/2017/12/19/homemade-salsa?rq=salsa)

1 jalapeno, thinly sliced

1/2 cup queso blanco, homemade or store-bought

1/2 cups fresh chopped cilantro leaves

1/4 cup sour cream

Directions:

  1. Preheat your oven to 375 degrees F. Lightly oil a baking sheet

  2. In a medium bowl, combine lime juice, garlic, paprika, onion powder and oregano.

  3. Heat the olive oil in a large skillet over medium high heat. Add steak and lime juice mixture, and cook, stirring often, until the steak is browned and the lime juice mixture has reduced. This takes about 5-6 minutes. Or cook until desired doneness.

  4. Place the tortilla chips in a single layer on the prepared baking sheet. Top with steak, cheese and the pico mixture.

  5. Place into the oven and bake until the cheese has melted, about 10 minutes

  6. Serve immediately and top with avocado, jalapeño, queso blanco, sour cream and cilantro
