Cheesy Spinach Artichoke Dip
This extra cheesy, decadent dip is something that I've tried this dip at many restaurants but always was missing something; garlic and cheese. If you don't like spinach or artichokes, don't worry, you'll never know they're in there! I serve this with tortilla chips or any sort of bread; but sometimes I catch myself eating it with just the spoon! I've never added the traditional "salt and pepper" seasonings to this dish because all of the cheeses, garlic and basil have enough salt and flavor for the dish.
Yield: About 8-10 servings
Ingredients:
1 cup of cream cheese, room temperature
1/4 cup Mayonnaise
1/2 cup Parmesan cheese
2 cloves Garlic, peeled and minced
1 tablespoon basil, finely chopped
1/2 cup frozen chopped spinach
1 cup frozen artichokes, chopped
1 cup shredded mozzarella cheese
Directions:
1. Preheat your oven to 350 degrees F. Get a medium baking dish and fill it up 1/4 of an inch with water. Place ramekins (small baking dishes) into the medium baking dish. Set aside.
2. In a medium bowl, combine together the cream cheese, mayo, parmesan cheese, 1/2 cup of the mozzarella cheese, garlic and basil. Gently stir in artichoke hearts and spinach.
3. Transfer the mixture to the prepared ramekins (This recipe usually fills up to 5 ramekins). Top them off with the remaining mozzarella cheese. Cover with aluminum foil and bake for 20 minutes. Then, take off the aluminum foil and bake for an additional 20 minutes, or until golden brown. Serve warm and enjoy!
