Cheesy Mashed Potatoes

This mashed potato recipe is flavorful with butter, cream cheese, a lot of mozzarella cheese, and garlic. It’s a great side dish for any time of the year.


Yield: 4 Servings as a side dish

Ingredients:

2 Pounds Potatoes (Yukon Gold or Russet)

1 teaspoon salt

1/3 cup milk

5 tablespoons unsalted butter

4 cloves of garlic, finely chopped or minced

1/4 cup cream cheese

2 cup mozzarella cheese, shredded

Salt and Pepper to taste

Fresh chopped parsley to garnish

Directions:

  1. Peel and cut the potatoes into quarters.

  2. Place potatoes in a large pot and cover with cold water. Add in about a tablespoon of salt and bring to a boil. Reduce the heat down to a medium-low heat and allow the potatoes to simmer until tender. To know when they’re ready, poke a fork into a potato and it will be soft.

  3. In the meantime, heat about 1 tablespoon of butter in a small pan over medium heat. Add in the garlic and sauté for about 1 minute. Set aside and keep warm

  4. When the potatoes are done, drain the potatoes. Add in the remaining butter, garlic butter, milk and cream cheese. Mash the potatoes with a masher until smooth. If you see it’s needed, add in a bit more milk. Add in your mozzarella cheese and stir with a wooden spoon until melted in and smooth. Be careful not to over mix or the potatoes will become gummy.

  5. Season with salt and pepper to desired taste.

  6. Pour the mashed potatoes into a serving dish. Garnish with parsley or chives if desired and enjoy!
