Smashed Potatoes

Potatoes are so versatile and delicious. I love them and especially the fact that there are numerous ways to make them! However, this version of potatoes is by far my favorite. Soft on the inside and crispy on the outside, these are the perfect side dish for any meal!


Yield: 6 Servings

Ingredients:

24 ounces Dutch yellow baby potatoes

2 tablespoons olive oil

3 cloves garlic, chopped finely

1 teaspoon paprika

1 tablespoon fresh parsley

Kosher salt and freshly  ground black pepper, to taste

Directions:

  1. Preheat your oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray.

  2. In a large pot of boiling water, cook potatoes until tender, about 15-20 minutes; drain well.

  3. Place potatoes onto the prepared baking sheet. Using a potato masher (I didn’t have one on hand so I used a flat bottom glass cup), carefully smash the potatoes until flattened but still in one piece. Top with olive oil, garlic paprika, salt and pepper.

  4. Place into oven and bake for 18-20 minutes, or until golden brown and crisp.

  5. Top with parsley. Serve immediately.
