Roasted Brussel Sprouts

One of my favorite sides with holiday meals. The pancetta gives it the perfect amount of salty flavor. Super easy and you only need one pan!


Ingredients:

2 pounds Brussel Sprouts

4 ounces Pancetta, or bacon, diced

1/2 cup Olive Oil

4 cloves Garlic, minced or finely chopped

1 teaspoon Salt

1/2 teaspoon Black Pepper

Directions:

  1. Preheat your oven to 400 degrees Fahrenheit.

  2. Trim the ends of the Brussel sprouts and cut them in half.

  3. Place them on a large baking sheet along with the pancetta and garlic. Drizzle with olive oil and season with the salt and pepper. Toss them to be evenly coated and spread the mixture out into a single layer.

  4. Roast the sprouts until tender with charred edges, about 20-25 minutes. The bacon will be cooked all the way through and crispy. Enjoy!
