Oven Roasted Carrots

Roasting carrots is super easy and a technique that can be applied to most root vegetables. They’re a delicious side dish to your main course that is simple yet savory.
Yield: 6 Servings
2 Pounds Carrots
3 tablespoons olive oil
2 teaspoons salt
1 teaspoon ground pepper
1 teaspoon paprika
Chopped parsley and crumbled feta, for garnish
Directions:
Preheat oven to 425 Degrees Fahrenheit. Line a baking sheet with parchment paper.
Prep your carrots: wash and peel (slice them in half if they’re large).
Toss your carrots with the olive oil, salt and paprika.
Pour onto prepared baking sheet and arrange carrots in a single layer. Bake 20-25 minutes. Ensure carrots are tender when pierced with a fork.
Serve warm and garnish with parsley and feta if desired!
