Oven Roasted Carrots

Roasting carrots is super easy and a technique that can be applied to most root vegetables. They’re a delicious side dish to your main course that is simple yet savory.


Yield: 6 Servings

2 Pounds Carrots

3 tablespoons olive oil

2 teaspoons salt

1 teaspoon ground pepper

1 teaspoon paprika

Chopped parsley and crumbled feta, for garnish

Directions:

  1. Preheat oven to 425 Degrees Fahrenheit. Line a baking sheet with parchment paper.

  2. Prep your carrots: wash and peel (slice them in half if they’re large).

  3. Toss your carrots with the olive oil, salt and paprika.

  4. Pour onto prepared baking sheet and arrange carrots in a single layer. Bake 20-25 minutes. Ensure carrots are tender when pierced with a fork.

  5. Serve warm and garnish with parsley and feta if desired!
