The Best Chopped Salad

I know some of you may be reading the title like “really, can salad be the best?”. I never was a fan of salads until I started incorporating more ingredients and pulling it all together with a solid dressing. Salad doesn’t have to be boring! I have this probably everyday with my lunch or dinner. It’s totally customizable and you can add in more of what you like or leave out ingredients you don’t prefer. This is exactly what I put in mine.


Yield: 3-4 Servings (As a side)

5 cups loosely packed lettuce (Red Leaf Lettuce is preferred)

1/4 red onion, thinly sliced

1 cup cherry or grape tomatoes, halved

1 cup cucumber, sliced

1 avocado, diced

1/4 cup walnuts, chopped

1/2 cups apple, chopped

1 radish, sliced

FOR THE DRESSING

1/2 cup extra virgin olive oil

2 tablespoons lemon juice

1 tablespoon red wine vinegar

1/2 teaspoon salt

1/2 teaspoon pepper

1/3 cup fresh basil, chopped

  1. In a large bowl, combine the lettuce, red onion, tomato, cucumber, avocado, walnuts, apple and radish. Set a aside

  2. In a small mixing bowl, combine all of the ingredients for the dressing, whisk well with a fork until combined. Pour over your salad and toss well. If desired, sprinkle some feta cheese. Enjoy!
