Rolled Schnitzel
When traveling to Montenegro, there's always one restaurant that I go to, as I'm sure everyone else does, and it's called "Troja". When I go, there is one dish that I order every time, they call it "Popeči". It's a rolled up schnitzel that's stuffed and rolled with cheese and then fried. Eventually, my mom taught herself how to make these with her own twist to them. And just like almost every other recipe, I learned how to make this from her. I love serving these over a bed of arugula salad or with french fries on the side. This recipe is so easy and so delicious!
Yield: 6 Servings
Ingredients:
6 slices Veal
6 slices Prosciutto de Parma
3 Mozzarella String Cheese Sticks, cut in halves
For Dredging:
1 cup of flour
3 eggs, beaten
1 cup breadcrumbs
For Frying:
Vegetable Oil
Directions:
1. Preheat your oven to 400 degrees F.
2. On a clean flat surface, place 1 slice of veal. With a meat tenderizer, beat down the meat until it is very thin.
3. Place one slice of prosciutto, then a piece of cheese. Roll them up and place aside until all of the schnitzels are rolled up.
4. In small plates or bowls, add the flour, eggs, and breadcrumbs, separately. Dredge the roll-ups in the flour first, the eggs second, and the bread crumbs last.
5. In a medium to large frying pan, add cooking oil over low-medium heat. Heat until the oil is hot not sizzling and add your roll ups. Cook on medium heat for about 5 minutes. Turn the roll-ups over and repeat cooking for 5 minutes. They should be a golden-brown color.
6. Remove your rolls onto a baking dish. Place in the oven and let them cook for about 10-15 minutes.
7. Serve them immediately with a desired side dish and enjoy!
