Salmon with Avocado Salsa

I'm not one that's usually a fan of seafood, but I ordered this dish at a restaurant once and fell in love. What I love about this dish is that it's simple and healthy, yet full of flavor. The ingredients are tasty and subtle and don't overpower the salmon. My favorite salmon is wild caught and fresh from Whole Foods. One thing to watch out for with this fish is that it's delicate and can easily over-cook; so make sure you're always keeping an eye on it.  It will continue to cook after it is removed from the heat. You may already have these ingredients already in your fridge, so why not make it tonight?

Yield: Serves 2

Ingredients:

2, 6oz, filets of salmon

1 avocado, diced

1/4 cup red onion, diced

2 tomatoes, diced

1/4 cup olive oil

Salt & Pepper, to taste

Directions:

1. Heat up your grill pan over medium heat. Drizzle olive oil on top.

2. Lightly season your salmon with desired amount of salt and pepper. When the pan is hot, place fish, skin side down, on the pan. Cover and cook for about 4 minutes. Carefully turn the salmon, cover and grill for another 4 minutes, more or less, depending on your taste. When the fish is cooked to your liking, remove from the pan and cover with aluminum foil while assembling your salsa.

3. To make the salsa, combine the onion, avocado, olive oil, salt & pepper in a bowl.

4. Plate your salmon and top with the avocado salsa.
