Apple Butterscotch Cake

Fall is here which means desserts and treats filled with either apples or pumpkin. I can’t wait to share a handful of both with you all! This recipe, I got from my Great Aunt out in California. It’s loaded with apples and butterscotch chips. This cake pairs perfectly with your morning coffee or evening dessert. Either way, you’ll love it! Whenever you get your fresh apples from apple picking season, try this out!


Yield: 8-10 servings

Ingredients:

1 1/4 cup flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

1 cup sugar

1/2 cup vegetable oil

2 eggs

1/2 cup butterscotch chips

4 apples, skinned and chopped into cubes

Directions:

  1. Preheat your oven to 350 degrees Fahrenheit. Line up a 11 X 7 inch baking pan with wax paper and set aside.

  2. In a bowl, sift all of the dry ingredients and mix well.

  3. Gradually add in the vegetable oil and eggs until all incorporated. The mixture will be thick.

  4. Add in the chopped apples and butterscotch chips and mix for about 30 seconds.

  5. Pour cake mixture into the lined baking pan. Cover with aluminum foil and bake covered for 20 minutes and bake uncovered for 20 minutes.
