Apple Layered Crumb Cake
This ultra soft crumb cake is loaded with apples and is 5 layers of heaven! What better way to enjoy a cozy fall morning then with a hot cup of coffee and a piece of this cake (or honestly just enjoy this at any time of the day). I’ve tested a bunch of different apple cake recipes and finally came up with what I think is the winner. Enjoy!
Ingredients:
FOR THE CAKE
1 cup unsalted butter, room temperature
1/.2 cup granulated sugar
1/2 cup light brown sugar
3 eggs, room temperature
1 tablespoon vanilla extract
3/4 cup sour cream
1 teaspoon salt
3 teaspoons baking powder
1 1/14 cup milk
3 1/2 cups all-purpose flour
FOR THE CINNAMON FILLING
3/4 cup light brown sugar
3/4 cup all purpose flour
2 teaspoons ground
CRUMB TOPPING
6 tablespoons butter, melted and cooled
1 cup light brown sugar
1 1/2 tablespoons ground cinnamon
1 cup all purpose flour
ICING
1 cup powdered sugar
2-3 tablespoons milk
APPLE LAYER
4 Apples, peeled and sliced
Directions:
Prepare a 9X13 baking dish with wax paper or nonstick spray. Preheat you oven to 350 Degrees Fahrenheit.
For the cinnamon layer, in a medium bowl whisk together the light brown sugar, the flour and cinnamon until combined. Set it aside.
For the crumb toppings, in a medium bowl, mix together the butter, light brown sugar, cinnamon and flour until the mixture resembles coarse crumbs. Set aside.
For the apple layer, peel and core your apple. slice into thin pieces for layering. Set aside
For the cake . in a standing mixer with a paddle attachment, mix together the butter and sugars for about 2 minutes (it will be light and fluffy). Add in the eggs, vanilla, sour cream, salt and baking powder and mix for another minute until smooth.
Turn the mixer on lower and add in the milk and flour in alternating portions. Mix until just combined and smooth scraping the sides of the bowl.
Time to layer! Spread half of the cake batter into the prepared pan. Then, sprinkle the cinnamon filling evenly on top of the batter. Carefully spread the remainder of the batter on top of the cinnamon layer. Then, line up the apple slices evenly on top of the cinnamon layer. Lastly, evenly sprinkler the crumb topping on top.
8 Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
9. Remove the cake from the oven and cool completely.
10. Whisk together the powdered sugar and milk until nice and smooth and drizzle on top of the cooled caked. Enjoy!
