European Iced Coffee

I went to a cafe in Montenegro and asked for an iced coffee, and this is what I got. It’s not your typical iced coffee you get from your favorite coffee shop in the states. Instead of ice, they use ice cream…i’m not mad about that! It’s a sweet vanilla ice cream layer topped with cold coffee and whipped espresso cream. Simply heaven in a cup. Enjoy!


Yield: 2 servings

Ingredients:

2 scoops of high quality vanilla ice cream

1 cup cold coffee, the stronger the better

1/2 cup heavy whipping cream, cold

1/8 tsp espresso powder

1 tsp pure vanilla extract

1 tsp granulated sugar

Directions:

  1. In the bowl of your stand mixer, combine the espresso powder, vanilla extract and heavy cream. Whip them on high speed until it begins to thicken.

  2. Slowly add the granulated sugar and continue whipping until stiff peaks form.

  3. Time to assemble your coffee. In two glass cups, scoop one scoop of vanilla ice cream in each. Slowly pour over the cold coffee leaving half an inch of room at the top. Dollop the espresso whipped cream on top.

  4. Serve immediately with straws and a spoon.
