Greek Chicken Gyros

Greek food has always been in the spotlight for its use of fresh spices and herbs and flavorful meats. I wanted to create a Chicken Gyro recipe using those techniques and it has to be one of my top 5 favorite meals. There’s so much flavor in each bite and it can be made in no time.
Yield: 5-6 Servings
2 lbs boneless chicken thighs
MARINADE
4 garlic cloves, minced
4 tablespoons lemon juice
2 tablespoons olive oil
3 tablespoon greek yogurt (full fat is preferable)
1 tablespoon oregano
1 teaspoon salt
1/2 teaspoon black pepper
FOR THE TOPPING
2 cups cherry tomatoes, quartered
1 red onion, thinly sliced
2 cups shredded romaine lettuce
Salt and pepper
TO SERVE:
2 Cups Tzatziki Sauce (https://maciskitchen.com/blog/2018/5/21/tzatziki-sauce)
5 or 6 pita breads
Directions:
- In a gallon size Ziploc bag, combine the chicken, garlic, lemon, olive oil, yogurt, oregano, salt & pepper. Marinate for at least an hour (or up to 24 hours, the longer the better) 
- Preheat grill pan to medium heat. Add the chicken and cook, turning occasionally, until the chicken is completely cooked through and browned on both sides. This should take about 8-10 minutes. 
- To serve, get a pita bread (warmed up) and place it on a piece of parchment paper. Place a spoonful of tzatziki sauce and fill with chicken (chopped up if needed), tomatoes, onion and lettuce. Serve immediately and enjoy!
