Cilantro Lime Chicken Thighs

This recipe results in the most juicy and tender chicken thighs. The zesty cilantro-lime marinade creates an amazing flavor. This chicken can be put in wraps, added in a burrito bowl or honestly in anything you prefer.


Yield: 6 servings

Ingredients:

2 pounds boneless, skinless chicken thighs

3 tablespoons olive oil

1/4 cup fresh cilantro, chopped

3 tablespoons fresh lime juice

1 teaspoon garlic powder

1 teaspoon salt

1 teaspoon black pepper

Direction:

  1. In a medium bowl, combine the olive oil, cilantro, lime juice, garlic powder, salt and pepper

  2. In a gallon size Ziploc or large bowl, combine the cilantro mixture and chicken. Marinate for at least one hour or overnight, the longer the better.

  3. Heat a grill pan over medium-high heat. Working in batches, add the chicken to the pan in a single layer and cook until golden brown on both sides and cooked through.

  4. Serve immediately.
