Chocolate Chip Cookies

Everyone that I ask always says they can never find the perfect chocolate chip cookie recipe. After trying a handful of recipes and learning a few tips and tricks, I’ve come up with something simple and delicious. It’s my go to recipe and a favorite of many.


Yield: 35 Cookies

Ingredients:

·      2 ¼ cups all-purpose flour

·      ½ teaspoon baking soda

·      1 cup (2 sticks) unsalted butter, softened

·      ½ cup granulated sugar

·      1 cup dark-brown sugar

·      1 teaspoon salt

·      2 teaspoons vanilla extract

·      2 eggs, room temperature

·      2 cups semi-sweet chocolate chips

 

Directions:

1.     Preheat oven to 350 degrees.

2.     Line a baking sheet with parchment paper.

3.     In a bowl, whisk together the flour, baking soda, and salt; set aside.

4.     In a separate bowl, put butter and both sugars and use an electric mixer and mix for about 2 minutes, until fluffy.

5.     Reduce speed to low and add the eggs and vanilla; mix until well blended, about 1 minute.

6.     Mix in flour mixture ONLY until well combined; about 10 to 20 seconds (over blending can cause the flour to become tough in the dough, therefore not letting the cookies spread evenly in the oven).

7.     Stir in chocolate chips.

8.     Drop heaping tablespoons of dough onto baking sheet about 2 inches apart.  Bake cookies for about 10 to 12 minutes, rotating sheet about halfway through.

9.     Let them cool on wire racks for a few minutes. Serve them warm and enjoy!

Tips:

·      If baking soda is over a month old, it has no use for baking.

·      Even if the cookie doesn’t look fully baked when the time is up, still take it out of the oven as the heat in the cookie still continues the baking process when taken out.

·      When storing, to keep the cookie soft and chewy, put all the cooled cookies in an airtight container with a piece of white sandwich bread on top. The cookies take the all the moisture out of the bread, which keeps them soft.

·      If the butter and eggs are cold, stick the butter in the microwave for about 5 seconds at a time, until soft. As for the eggs, place them in a bowl of hot water for about 1 minute.
