BBQ Chicken Quesadilla
Whenever I have some leftover grilled chicken or chicken cutlet in my fridge, I always use it to make these tasty little quesadillas. These are packed with flavor and only have four ingredients. This dish is quite flexible. If you like extra chicken, cheese, or barbecue sauce, simply add some more. Serve these with sour cream or even more barbecue sauce on the side. The best part is, you don't need any fancy equipment to make quesadillas. You can make these on a non-stick skillet, cast-iron skilled, or a griddle. These make a great appetizer for any party!
Ingredients:
2 cups of chicken (whichever you have, I used leftover grilled chicken)
1/2 cup BBQ Sauce
1/2 cup red onion, chopped
2 cups mozzarella cheese, shredded
Directions:
1. In a large skillet, add about 2 tablespoons of olive oil and onion. Cook onions until they are soft and almost translucent.
2. While the onion is cooking, shred up your chicken.
3. Add shredded chicken to the pan with the onions. Add the barbecue sauce and stir. Remove from pan and set aside.
4. On medium heat, place a tortilla in a pan and add a layer of cheese, then add the BBQ chicken on top. Place another tortilla on top and cook about 3 minutes each side.
5. Serve with extra BBQ sauce or sour cream and enjoy!
